Region: Lisbon, Portugal Producer: Casa Agrícola das Mimosas - Quinta de Chocapalha Grapes: 100% Castelão Alcohol Content: 14% Soil Type: Limestone Clay Vineyard Age: 31 years
Quinta de Chocapalha Castelão 2021 stands out for its intense and vibrant red color. On the nose, it has intense fruity aromas, with notes of ripe red fruits and a floral touch. In the mouth, it is elegant and charming, with sweet and silky tannins. The finish is fresh and prolonged, showing the sophistication and balance of this wine.
The grapes were de-stemmed and underwent pre-fermentation maceration at low temperatures for 12 hours to extract the best aromas and flavors. Alcoholic fermentation was carried out in stainless steel tanks, with temperature control, not exceeding 25ºC, for 10 days. Half of the wine aged for 15 months in used French oak barrels, while the other half remained in stainless steel, ensuring a balance between fruit and wood.
Ideal to accompany grilled meat dishes, pasta with rich sauces and aged cheeses. Serve at 16-18°C to fully appreciate the nuances of this wine.
