Quinta de Chocapalha Cabernet Sauvignon 2020 has an intense violet color, reflecting the richness and complexity of the wine. On the nose, typical aromas of the variety stand out, with a harmonious combination of spices, blackberries and currants. In the mouth, it reveals balanced acidity, ripe fruit and soft tannins, resulting in a fresh, elegant and prolonged finish.
The grapes were carefully de-stemmed and subjected to pre-fermentation maceration at low temperatures for 12 hours, enhancing the fruity aromas. Alcoholic fermentation took place in stainless steel vats, with strict temperature control (maximum 25ºC) for 11 days. Aging and malolactic fermentation took place in French oak barrels, 40% in new barrels and 60% in second year barrels, for 12 months.
Perfect to accompany grilled red meats, game dishes, pasta with rich sauces and aged cheeses. Serve at a temperature of 16-18°C to fully enjoy its qualities.
