Following the success with our first Alvarinho sparkling wine, we were curious to see what the expressions of Alvarinho would look like after fermentation in barrels.
Soalheiro Sparkling Brut Barrica is a sparkling wine with a distinct character provided by its aging in barrels. Primary fermentation takes place in oak and the base wine remains in barrels for 12 months, which gives it a great complexity of flavor and a creamy, long-lasting texture.
After the secondary fermentation that takes place in the bottle and, after 36 months of aging, this wine shows all the elegance and complexity of Alvarinho, with special emphasis on its less fruity characteristics.
It is a wine that follows the production model of our favorite French sparkling wines, but with a special touch of Monção and Melgaço.
Vinification: Alvarinho grapes are hand-picked and carefully selected. Primary fermentation takes place in used oak barrels, where the wine will age for 12 months. This stage gives the wine a more evolving and intense aroma character, as well as more flavor and a lasting texture.
Secondary fermentation then takes place in the bottle. The wine still ages for 36 months in our cellar at a constant and low temperature.
After this aging process, the “dégorgement” is carried out in order to remove the yeasts from the bottle and the metallic cap is replaced by a traditional stopper made of Portuguese cork.
