It has a citrine yellow color, fine and persistent bubble. The aroma reveals the fruit of the Alvarinho variety, denoting a good balance between acidity and alcohol. It is ideal as an aperitif with regional sausages or to accompany roasts in the oven.
Vinification
The must resulting from a careful selection of grapes ferments at controlled temperature, obtaining the base wine for sparkling wine. This wine undergoes, already in the bottle, a second fermentation. The stay in the cellar, the low and constant temperature for several months allows this sparkling wine to show all the elegance of the Alvarinho variety, in this case the aging took place for 24 months. After this fermentation and aging phase, degorgement is carried out, an operation that allows the elimination of existing yeasts in the bottle and the replacement of the temporary metallic capsule with the definitive cork typical of sparkling wine.
