Soalheiro Espumante Bruto was the first sparkling wine we produced in 1995. At that time, we were the first producer to make a 100% Alvarinho sparkling wine. Now this trend occurs in other parts of the Vinho Verde Region and the Rias Baixas. Our Brut Sparkling Wine is made using the classic method, undergoing secondary fermentation in the bottle. With this wine we intend to reveal the purity and aroma of Alvarinho. The Alvarinho Brut Sparkling Wine is fresh and reveals the elegance and complexity of the grape variety.
Terroir: These grapes come from small vineyards planted in granitic soil, at a higher altitude. This altitude allows us to maintain the freshness and aromas of the grape variety that we are looking for our Sparkling Brut to reveal.
Vinification: The making of a sparkling wine from the Alvarinho variety requires careful selection of the grapes for their right acidity level. These are then pressed and the must ferments at a controlled temperature, giving rise to the base wine.
In accordance with the traditional method of producing sparkling wine, this wine undergoes a second fermentation in the bottle. It remains in the basement for several months, ensuring a low and constant temperature. These conditions will allow the sparkling wine to reveal all the elegance of the variety that gave it origin.
After this aging process, the “dégorgement” is carried out in order to remove the yeasts from the bottle and the metallic cap is replaced by a traditional cork stopper, suitable for sparkling wines.
