The creation of the IDEAIS range of wines aims to offer consumers high quality wines, with a degree of complexity and elegance typical of the region, where fresh fruit prevails. They are wines that are easy to enjoy and drink, they are gastronomic wines, designed to be enjoyed by most people who appreciate fine Dão wines.
The grapes that make up this wine are from the Senhorim sub-region, where the vines are aged between 30 and 60 years, mostly monovarietal vines, that is, typical varieties of the Dão region, such as Touriga Nacional, Tinta Roriz, Alfrocheiro and Jane.
Vinification
After a careful selection in the vineyard, these grapes were transported to the cellar in 15kg boxes in order to respect and preserve the integrity of the grapes. Alcoholic fermentation took place in thermoregulated stainless steel vats for 6 weeks, followed by malolactic fermentation in French oak barrels for 18 months. After several tastings of all the barrels designed for this wine, the IDEAL barrels were chosen in order to compose a harmonious blend of wine that respects what was intended.
