Made from grapes from vineyards over 50 years old, located on clay-limestone soils in Alcantarilha. Fermentation occurs partly with whole bunches and partly with de-stemmed grapes, followed by a 5-month post-fermentation maceration in clay amphorae , which gives the wine a distinct complexity and unique personality.
