Tasting notes:

With an intense and captivating violet color, CH by Chocapalha Red stands out for its fresh and elegant aromas, with notes of black fruits, violets and spices. On the palate, it reveals impressive complexity, elegant tannins and a long, refined aftertaste. This is a wine with a mineral character, extremely elegant and of great finesse, reflecting the excellence of Touriga Nacional in a unique plot.

Winemaking and Aging:

The grapes were carefully de-stemmed and subjected to pre-fermentative maceration at low temperatures. Alcoholic fermentation took place in plants, with temperature control, not exceeding 25°C, for 9 days, using treading robots for delicate extraction. The wine aged for 22 months in French oak barrels, where malolactic fermentation also took place, ensuring an elegant and sophisticated profile.

Harmonization suggestion:

Perfect to accompany sophisticated dishes such as duck magret, game meat, roast lamb or dishes based on mushrooms and truffles. It also goes very well with aged cheeses and dark chocolate-based desserts. Serve between 16-18°C.
