The grapes from Encosta da Capela are grown on their own farm. Coming from old vines, in simple cordon, well ventilated and with good sun exposure. Planted in small terraced plots on west-facing slopes. The terrain is sandy with the presence of granite in the subsoil. The altitude varies between 150 and 300 meters in S. Paio – Melgaço.
The variety is 100% Alvarinho, harvested manually. The pressing is light and from the whole grape the flotation process is applied to extract the lees. Fermentation starts with selected yeast at controlled temperatures. Later, it is thinned and the batch is aged in stainless steel until bottling. In bottle, it ages for at least 4 months before going to the market.
